Plant-Based Cheesy Mexican Lentils
Ingredients:
3 cups vegetable broth
1 (10 ounce) can of Rotel (or similar)
3/4 cup of brown lentils
3/4 cup brown rice
1 small onion, chopped
2 cloves (minced) or 2 tsp of minced garlic
1 tbsp. taco seasoning
1 tsp. oregano
2 tbsp nutritional yeast
Directions:
Combine all ingredients in Instant Pot or other multi-functional pressure cooker. Mix. Close and lock lid. Program to high pressure cooking set for 8 minutes.
Release pressure using natural-release (refer to manufacturer’s instructions, if needed).
Open lid, stir. Replace lid and let sit for approximately 4 minutes.
