Plant-Based Cheesy Mexican Lentils


Ingredients:

  • 3 cups vegetable broth

  • 1 (10 ounce) can of Rotel (or similar)

  • 3/4 cup of brown lentils

  • 3/4 cup brown rice

  • 1 small onion, chopped

  • 2 cloves (minced) or 2 tsp of minced garlic

  • 1 tbsp. taco seasoning

  • 1 tsp. oregano

  • 2 tbsp nutritional yeast


Directions:

  1. Combine all ingredients in Instant Pot or other multi-functional pressure cooker. Mix. Close and lock lid. Program to high pressure cooking set for 8 minutes.

  2. Release pressure using natural-release (refer to manufacturer’s instructions, if needed).

  3. Open lid, stir. Replace lid and let sit for approximately 4 minutes.

  4. Serve & Enjoy!
