Lentil Sloppy Joe


Ingredients:

  • 1 green bell pepper (finely chopped)

  • 1 small onion

  • 3 cloves of garlic (minced)

  • 1 cup of water

  • 1 cup brown lentils (rinsed)

  • 1 cup crushed tomatoes

  • 1/4 cup ketchup

  • 2 tablespoons maple syrup

  • 1 teaspoon yellow mustard

  • 1 tablespoon apple cider vinegar

  • 8 whole grain hamburger buns


Directions:

  1. Heat multi-functional pressure cooker / Instant Pot to sauté. Lightly spray bottom of insert with Olive or avocado oil (use tablespoon of broth if avoiding or reducing oils - add more as needed). Sauté garlic, onion, and bell pepper until tender.

  2. Add lentils and water. Close and lock lid with vent closed. Set to high pressure for 8 minutes.

  3. Vent when complete.

  4. Add remaining ingredients (no buns!). Stir.

  5. Serve on buns & enjoy!
