Lentil Sloppy Joe
Ingredients:
1 green bell pepper (finely chopped)
1 small onion
3 cloves of garlic (minced)
1 cup of water
1 cup brown lentils (rinsed)
1 cup crushed tomatoes
1/4 cup ketchup
2 tablespoons maple syrup
1 teaspoon yellow mustard
1 tablespoon apple cider vinegar
8 whole grain hamburger buns
Directions:
Heat multi-functional pressure cooker / Instant Pot to sauté. Lightly spray bottom of insert with Olive or avocado oil (use tablespoon of broth if avoiding or reducing oils - add more as needed). Sauté garlic, onion, and bell pepper until tender.
Add lentils and water. Close and lock lid with vent closed. Set to high pressure for 8 minutes.
Vent when complete.
Add remaining ingredients (no buns!). Stir.
Serve on buns & enjoy!
