Family Favorite Black Bean Soup


Ingredients:

  • 3 cans of black beans, drained

  • 2 tablespoons garlic, minced

  • 1 medium yellow onion

  • 2 cups jasmine rice, cooked

  • 7 teaspoons taco seasoning

  • 3 cups low sodium vegetable broth

  • Pink Himalayan salt to taste


Directions:

  1. Lightly spray bottom of large pot with olive or avocado oil (use tablespoon of broth if avoiding or reducing oils - add more as needed). Sauté onions and garlic.

  2. Once onions are translucent and garlic is fragrant, add beans, broth, seasoning, and rice. Stir. Bring to a boil.

  3. Reduce to low heat for 10 minutes. Remove from heat. Stir.

  4. Carefully use immersion blender to blend to preferred consistency (our family generally blends to about 80% puréed.)

  5. Serve & enjoy!
